What is the name of the variable for the Joomla 'customfield'?

I want to create a custom template for the newsletter in AcyMailing 5 and therefore edit the tagcontent file.

Now I want to place two Joomla customfields in the layout. One directly above the title bar, one directly below.
What are the variables for this?

Alternatively: where can I edit the predefined templates? (TOP_LEFT and the others)
